P is for Persimmons!:)

Persimmons are good for your health!..and delicious! They are rich in Vitamin A, Vitamin C and beta-carotene, in fact, they contain 20 times as much Vitamin C as lemons. Also known as "Kaki", which means "food of the gods". They resemble large orange tomatoes but are honey sweet and delicious when eaten in your yogurt, kefir or a leafy green salad.

Vitamin C assists in the formation of collagen. Collagen is abundant in the connective tissue of cartilage and bone — in fact, it makes up about 30% of our bones, serving as a support structure for mineral deposits and giving bone its resilience. In addition to its role in collagen formation, vitamin C appears to stimulate the cells that build bone, enhance calcium absorption, and enhance vitamin D’s effect on bone metabolism.
